Barbecue Grilled Vegetables with Shrimp

Barbecued Shrimp Skewers with Vegetables

Barbecue Grilled Vegetables.  Grill the vegetables for example sliced up zuchinni, string beans, asparagas, baby carrots, red onion and sliced eggplant right up until tender with a fork which can be about 3 or 4 mins.  Have sliced up tomatoe un-cooked.  Immediately after they are grilled, you can add sea salt – pepper for all, fresh thyme for the baby carrots, oregano and sprinkle of chevre parmesan cheese about the eggplant, zucchini tossed that has a touch of curry, green beans gently buttered, and asparagas together with citrus zest.  Serve along with cooked radicchio that has a sprinkle with balsamic vinegar, and fresh arugula with a hint of lemon juice, olive-oil and dash of salt.

Barbecued Grilled Shrimp.  Place the shrimp in olive-oil, chopped red peppers, lemon zest juice, basil, sea salt, and pepper for around twenty or so minutes.  Slide on the skewer and barbeque grill on each side for 2 to 3 mins.  Serve and indulge.

Tips:  While the shrimp is marinating this can become a good time to put together any other sides.  You may cook these items individually or even use skewers.  Grill the veggies first, next combine the shrimp later, the shrimp will grill quickly.
